This Cast Iron Dutch Baby With Apples is a great breakfast that is sure to impress! The puffy baked pancake has sweet, thinly sliced apples and savory bacon throughout. Dust this skillet baked breakfast dish with powdered sugar and drizzle with your favorite maple syrup and you are in for a perfect start to your day!

I thought it would be fun to put a twist on the original dutch pancake recipe from my childhood and add the apples and bacon, taking it to a whole new level!

This is German pancake is great for breakfast, but it is also a great breakfast-for-dinner kind of meal. It doesn't matter what time of the day you choose to eat this, it's delicious either way! This would be a great breakfast option for Christmas morning or for any special occasion, really!

Why You Will Love This

  • It is easy to make. This baked fluffy pancake is simple to make with just a few basic ingredients. Just put the batter ingredients in the blender and pour over the apples and bacon befoe throwing in the oven to bake. There's just a few minutes of prep time and then you can pop it in the oven.
  • The apples and bacon. The sweet apples mixed with the savory bacon is a great flavor combo. Top your portion with powdered sugar and maple syrup and you've got quite the treat!
  • It is fun. Kids will love to watch this giant pancake bake because it puffs up in the oven. It is also fun to watch it deflate as it cools. Kids will love the twist on regular pancakes!

Ingredient Notes

Here is important info for some of the ingredients needed for this easy recipe. For the full ingredient list, see the recipe card below.

  • Butter: Use unsalted butter for this. With the added salt and the salty bacon, you really don't need anymore in this recipe!
  • Apple: You will want to use a sweet, flavorful apple for this like Braeburn, Pink Lady or my favorite, Honeycrisp.
  • Bacon: We prefer to use thick cut bacon, but any bacon would do. All bacon is good in my book!
  • Milk: You can use whatever kind of milk you have for this.
  • Sugar: Granulated sugar for the Dutch Baby and powdered sugar for sprinkling on top.
  • Vanilla: Pure vanilla extract or vanilla bean paste works great for this. I prefer to use this vanilla bean paste. It's delicious and I think much easier to measure out than the liquid version of vanilla.
  • Maple Syrup: We only buy pure maple syrup and I think there is nothing better! I recommend having some on had at all times.

Step by Step Instructions

Here is how to make this puffy pancake. You will need a 10-inch cast iron skillet or oven-safe nonstick skillet.

STEP 1: To begin, you will want to preheat your oven to 425°F.

STEP 2: In the cast iron skillet, melt the butter over medium heat. Once the butter is fully melted, remove the skillet from the heat.

STEP 3: Place your thinly sliced apples in the bottom of the skillet on top of the melted butter. I like to overlap them just a bit to make sure the entire bottom of the skillet is covered.

STEP 4: Sprinkle the chopped bacon on top of the apples.

STEP 5: In a blender, combine the eggs, flour, milk, sugar, vanilla, and salt. Blend until the ingredients are fully combined and there are no flour clumps remaining. You may need to scrape the bottom and sides to get any stuck flour to mix in with the rest of the ingredients.

STEP 6: Pour batter over the top of the bacon and apples in the skillet.

STEP 7: Place the skillet in the 425°F oven for 25-30 minutes or until the top is a light golden brown. (Be sure to use an oven mitt when removing your skillet from the oven!)

STEP 8: Let the Dutch baby cool for a couple of minutes before slicing into four pieces. Dust each piece with powdered sugar and serve with a drizzle maple syrup.

Expert Tips

Here are some tips for making this easy dutch baby pancake:

  • After cooking the bacon, use a kitchen shears to chop into desired size.
  • When adding the batter ingredients to the blender, add the flour last to avoid too much clumping and sticking to the sides.
  • Reserve a few apple slices and some of the chopped bacon to garnish the tops of each piece before serving.
  • Do not open the oven door while the dutch baby is baking. It will cause it to not puff up as much or will lose it's height from the change in temperature.

FAQ

Do I have to use a 10-inch cast iron skillet?

No! You could use any 10-inch ovenproof skillet that you have. Alternatively, a baking dish, cake pan, pie plate, or casserole dish would work too.

Can I make this without the bacon?

For sure! You can make this without the bacon and it will be just as delicious!

Could I make this plain without bacon or apples?

Yes. Plain Dutch babies are delicious with butter, syrup and fresh fruit. You could opt to top it with your favorite fruit, like fresh berries.

Storing and Freezing

Store the leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for about 1-1 ½ minutes.

Freezing is not recommended.

Ingredients
  

  • 4 tablespoons unsalted butter
  • 1 apple, thinly sliced
  • 4 slices bacon, cooked crisp and cut into 1-inch pieces
  • 4 eggs
  • ¾ cup flour
  • ¾ cup milk
  • 1 tablespoon sugar
  • 1 teaspoon vanilla
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 425°F.
  • Melt butter in 10-inch cast iron skillet over medium heat for about 3 minutes or until fully melted and beginning to brown. Remove from heat.

  • Lay apple slices in the bottom of the skillet, covering the bottom and overlapping slices a bit. Sprinkle bacon over the top of the apple slices.

  • In a blender, combine the eggs, flour, milk, sugar, vanilla and salt. Blend until flour is fully incorporated, scraping sides and bottom as needed if flour sticks.
    4 eggs, ¾ cup flour, ¾ cup milk, 1 tablespoon sugar, 1 teaspoon vanilla, ¼ teaspoon salt
  • Pour egg mixture over the top of apples and bacon. Place skillet in 425°F oven for 25-30 minutes or until golden brown on top. Remove from oven, let cool for 2 minutes. Dust with powdered sugar and serve with maple syrup.

    I am to make this over Easter weekend! If I double or triple the recipe what size pan would I use? Thanks!

      Yay! I think if you are planning to double or triple the recipe, you would have the best luck with dividing between two or three ovenproof skillets or 9-inch cake pans. You could also divide between casserole dishes or pie plates. Just keep an eye on them while they are baking to be sure you aren't overcooking them!

    this may be a dumb question. if when you cook it the apple and bacon are under the dutch baby batter how are they on the top of the dutch baby in your photos? do you add more to the top before or after cooking?

      They just float to the top during the baking process. You could definitely add more to the top after baking if you wanted to though!
