Cheesy Hasselback Sweet Potatoes

These Cheesy Hasselback Sweet Potatoes are going to be your favorite side dish to serve for your holiday meal, or any meal, really!

Ingredients Needed: sweet potatoes baby gold potatoes butter Italian seasoning cheddar cheese parmesan cheese

Step 1: Peel four sweet potatoes.

Step 2: Place two wooden spoons or two chopsticks on each side of potato and cut 1/8-inch thick slices.

Step 3: Place sliced sweet potatoes in baking dish or cast iron skillet.

Step 4: Fill in the spaces between the sweet potatoes with the baby gold potatoes.

Step 5: Combine melted butter and seasoning and brush over potatoes.

Step 6: Bake potatoes in 425° oven for 1 hour, basting with butter in bottom of pan every 10-15 minutes.  Sprinkle with cheeses and bake additional 5-10 minutes or until cheese is melted.

Step 7: Remove from oven and sprinkle with flake salt and rosemary, if desired.  Cool slightly before serving.
