Shredded Chicken Tacos with Roasted Pineapple Salsa

These tacos  are filled with shredded chicken tossed in lime juice, fresh pineapple salsa made with roasted pineapples and are topped with crumbled salty queso fresco.

Ingredients Needed: pineapple tomato red onion cilantro cumin lime juice jalapeno chicken broth chicken breast flour tortillas queso fresco

Step 1: Roast pineapples in 450°F oven for 15 minutes on each side.  Let cool.

Step 2: Chop pineapple and place in a medium bowl.

Step 3: Add the tomato, red onion, cilantro, jalapeno, cumin, salt and lime juice to the bowl and stir well.

Step 4: Cook chicken and shred.  Then toss with lime juice..

Step 5: Heat tortillas and assemble tacos.

Step 8: Enjoy!
