Simple Parmesan Panko Baked Cod

The cod is dipped in buttermilk and then dredged in a mixture of parmesan cheese and panko breadcrumbs. It is then baked at high heat in the oven until it has a perfect crunchy crust!

Ingredients Needed: panko breadcrumbs parmesan cheese garlic powder salt pepper flour buttermilk cod

Step 1: Place breadcrumb mixture, buttermilk and flour in three seperate shallow bowls.

Step 2: Working with one filet at a time, start by dredging it in the flour.

Step 3: Dip the cod filet in the buttermilk, turning to coat.

Step 4: Transfer to panko mixture, making sure to coat the entire filet.

Step 5: Repeat with remaining filets and place on broiler pan coated with cooking spray.

Step 6: Bake in 500° oven for 15-17 minutes or until fish flakes easily with a fork.

Step 7: Serve with fresh lemon wedges and tartar sauce.
