Lemon Pistachio Cake

This Lemon Pistachio Cake is a moist, fluffy cake with a crunchy pistachio topping and a tart lemon glaze drizzle.

Ingredients Needed for the Pistachio Crumble: pistachios flour sugar brown sugar butter

Step 2: Stir to combine and set aside.

Ingredients Needed for the Lemon Cake: cake flour baking  soda baking powder sugar butter lemon zest vanilla buttermilk

Step 1: Combine flour, baking powder and baking soda.  Stir with a whisk and set aside.

Step 2: Combine sugar, butter, vanilla and lemon zest.  Beat until fully combined.

Step 3: Alternate adding flour mixture and buttermilk to sugar mixture.  Mix just until combined.

Step 4: Spread batter in a 9-inch square cake pan.

Step 5: Sprinkle with pistachio mixture.

Step 6: Bake at 325° for about 40 minutes.  Let it cool completely before adding drizzle.

Ingredients Needed for the Lemon Glaze: powdered sugar lemon juice vanilla heavy whipping cream

Step 1: Whisk glaze ingredients together and drizzle over cake.

Step 2: Slice into 16 squares.
