Mini Bell Pepper Nachos with Chorizo

These Mini Bell Pepper Nachos stuffed with a delicious chorizo mixture and topped with shredded cheddar, sour cream and cilantro are the perfect snack or appetizer.

Ingredients Needed: olive oil pork chorizo green onion tomato sauce sour cream mini bell peppers cheddar cheese cilantro

Step 1: Cook chorizo over medium-high heat for about 5 minutes.

Step 2: Add green onions and continue to cook for about 3 minutes.

Step 3: Add tomato sauce and cook for 3 more minutes or until sauce is thickened.

Step 4: Add sour cream and stir to combine.

Step 5: Fill halved mini bell peppers with chorizo mixture.

Step 6: Top with shredded cheese.

Step 7: Bake at 350° for about 5-7 minutes.   Top with a dollop of cream cheese and cilantro.

Step 8: Enjoy!
