Creamy Roasted Tomato Soup and Homemade Pesto Croutons

This creamy roasted tomato soup is made with fresh, roasted tomatoes and topped with big crunchy pesto croutons. It is a perfect cozy meal to warm you up during those cooler weather months.

Ingredients Needed: tomatoes onion celery olive oil basil tomato paste chicken stock French bread pesto heavy whipping cream salt & pepper

Step 1: Roast tomatoes, celery and onions.

Step 2: Combine roasted vegetables, chicken stock, tomato paste and basil.  Bring to a boil and simmer for 10 minutes.

Step 3: Use an immersion blender to blend until smooth.

Step 4: Add whipping cream and stir to combine.

Step 5: Combine bread and pesto and bake until toasted.

Step 6: Top soup with croutons, additional pesto and enjoy!
