Step 1: Peel four sweet potatoes.
Step 2: Place two wooden spoons or two chopsticks on each side of potato and cut 1/8-inch thick slices.
Step 3: Place sliced sweet potatoes in baking dish or cast iron skillet.
Step 4: Fill in the spaces between the sweet potatoes with the baby gold potatoes. (this is optional, but the baby golds catch all the extra cheese and butter and are so good!!)
Step 5: Combine melted butter and seasoning and brush over potatoes.
Step 6: Bake potatoes in 425° oven for 1 hour, basting with butter in bottom of pan every 10-15 minutes. Sprinkle with cheeses and bake additional 5-10 minutes or until cheese is melted.
Step 7: Remove from oven and sprinkle with flake salt and rosemary, if desired. Cool slightly before serving.
