Chocolate Cupcakes with Strawberry Buttercream Frosting

These chocolate cupcakes with strawberry buttercream frosting are moist, fluffy and perfect for so many occasions.

Ingredients Needed for the Cupcakes: vegetable oil butter flour sugar baking powder salt cocoa powder vanilla egg buttermilk

Step 1: In a large bowl, combine the flour, sugar, cocoa powder, baking powder and salt.  Stir with a whisk to combine.

Step 2: Add the butter, vegetable oil and water.  Beat on low speed until mixed.

Step 3: Add the egg, vanilla and buttermilk.  Beat on low until mixed and smooth.

Step 4: Fill muffin liners 3/4 of the way full and bake at 350°F for 23-25 minutes.

Ingredients Needed for the Strawberry Buttercream Frosting: butter freeze dried strawberries powdered sugar vanilla heaving whipping cream

Step 1: Place freeze dried strawberries in blender or food processor and process until a fine dust forms.

Step 2: Beat butter for 4 minutes, or until pale in color.

Step 3: Add strawberry powder, powdered sugar and vanilla.  Beat for 4 minutes, or until light and fluffy.

Step 4: Add the whipping cream and beat for 2 more minutes.

Step 5: Frost cupcakes and top with chopped chocoalte and a fresh strawberry slice.
