Cinnamon Sugar Pumpkin Blondies

When fall rolls around, there’s nothing better than a soft, chewy treat filled with pumpkin and cozy spices. These Cinnamon Sugar Pumpkin Blondies are buttery bars with a hint of pumpkin and a crackly cinnamon sugar topping that makes every bite oh-so-good.

Ingredients
  

  • 1 cup brown sugar
  • ½ cup brown butter cooled to room temperature
  • ½ cup pumpkin puree
  • ½ cup granulated sugar
  • 1 egg
  • 1 tablespoon vanilla
  • 1 ¾ cups flour
  • 1 teaspoon salt
  • ½ teaspoon cinnamon

For the Cinnamon and sugar on top:

  • ¼ cup sugar
  • ¾ teaspoons cinnamon

Instructions
 

  • Preheat the oven to 350°F and line a square baking dish with parchment paper, if desired.
  • In a medium sized bowl, combine the brown sugar, butter, pumpkin, and sugar. Whisk for 1 minute.
    1 cup brown sugar, ½ cup brown butter, ½ cup pumpkin puree, ½ cup granulated sugar
  • Add the egg and vanilla. Whisk for one minute
    1 egg, 1 tablespoon vanilla
  • In a separate medium sized bowl, combine the flour, salt and cinnamon. Whisk until combined and then add to the butter mixture. Fold in with spatula just until combined.
    1 ¾ cups flour, 1 teaspoon salt, ½ teaspoon cinnamon
  • Transfer to the prepared square baking dish.
  • In a small bowl, combine the cinnamon and sugar. Sprinkle about ¾ of the mixture generously over the top of the batter.
    ¼ cup sugar, ¾ teaspoons cinnamon
  • Bake in the preheated oven at 350° for 25-27 minutes or until edges are beginning to brown and center is set.
  • Remove from the oven and immediately sprinkle with the remaining cinnamon sugar mixture.
  • Allow to cool completely before slicing into squares and enjoying.
