When fall rolls around, there’s nothing better than a soft, chewy treat filled with pumpkin and cozy spices. These Cinnamon Sugar Pumpkin Blondies are buttery bars with a hint of pumpkin and a crackly cinnamon sugar topping that makes every bite oh-so-good.
Preheat the oven to 350°F and line a square baking dish with parchment paper, if desired.
In a medium sized bowl, combine the brown sugar, butter, pumpkin, and sugar. Whisk for 1 minute.
1 cup brown sugar, ½ cup brown butter, ½ cup pumpkin puree, ½ cup granulated sugar
Add the egg and vanilla. Whisk for one minute
1 egg, 1 tablespoon vanilla
In a separate medium sized bowl, combine the flour, salt and cinnamon. Whisk until combined and then add to the butter mixture. Fold in with spatula just until combined.
1 ¾ cups flour, 1 teaspoon salt, ½ teaspoon cinnamon
Transfer to the prepared square baking dish.
In a small bowl, combine the cinnamon and sugar. Sprinkle about ¾ of the mixture generously over the top of the batter.
¼ cup sugar, ¾ teaspoons cinnamon
Bake in the preheated oven at 350° for 25-27 minutes or until edges are beginning to brown and center is set.
Remove from the oven and immediately sprinkle with the remaining cinnamon sugar mixture.
Allow to cool completely before slicing into squares and enjoying.
