Sour Cream Apple Squares

These Sour Cream Apple Squares have tender apples, a hint of cinnamon and a buttery brown sugar and walnut crust that tastes a bit like a cinnamon graham cracker. Serve them at room temperature or slightly warm with whipped cream or vanilla ice cream for an easy fall dessert.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups packed brown sugar
  • ½ cup butter, softened
  • 1 cup chopped walnuts
  • 1 cup sour cream
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 egg
  • ½ teaspoon salt
  • 2 cups peeled, cored and chopped apples (about 2 medium apples)
  • Whipped cream or vanilla ice cream for serving, optional

Instructions
 

  • Preheat the oven to 350°F. Lightly coat a 9×13-inch metal cake pan with cooking spray. If desired, line the pan with parchment paper, leaving an overhang on two opposite sides.
  • In a large mixing bowl, combine the flour, brown sugar and softened butter. Mix with a hand mixer until the mixture forms moist crumbs. Stir in the walnuts.

  • Measure 2¾ cups of the crumb mixture into the prepared pan. Use the bottom of a measuring cup to press it firmly and evenly across the bottom of the pan.
  • Add the sour cream, cinnamon, vanilla, baking soda, egg and salt to the remaining crumb mixture. Mix on low just until combined. Fold in the chopped apples.

  • Spoon the apple mixture over the crust and spread it into an even layer.
  • Bake for 35–40 minutes, or until the top is golden brown, the center looks set and a toothpick inserted near the center comes out mostly clean without wet batter.
  • Let the squares cool completely in the pan. Use the parchment-paper overhang to lift them from the pan, then cut into 24 squares. Serve as they are or top with whipped cream or vanilla ice cream.

Notes

To make a half batch in a 9×9-inch pan: Halve all the ingredients. After preparing the crumb mixture, press 1⅜ cups into the prepared pan for the crust. Bake for 25–27 minutes, or until the top is golden brown, the center is set and a toothpick comes out mostly clean.
To halve the egg, whisk it until evenly combined and use half by weight. Without a kitchen scale, measure approximately 1½ tablespoons of beaten egg.
